This Shrimp Orzo Pasta Salad <\/strong>is cool and refreshing with tomatoes, cucumbers, and a zesty homemade dressing!<\/em><\/p>\n This cold pasta salad recipe is SO delicious and uses lots of seasonal veggies just like my Asparagus Pasta Salad<\/a>!<\/p>\n <\/p>\n This is the perfect pasta side dish for potlucks and parties, plus it disappears SO fast. <\/p>\n This is an easy and delicious summer pasta salad with color, flavor, and crunch! Fresh cucumbers, juicy tomatoes, and delicious cooked shrimp with a zesty, lemony vinaigrette that everyone is sure to love! <\/p>\n Looking for the perfect side dish to make for a BBQ? This is it!<\/p>\n Here’s the basic list of ingredients you’ll need in order to make this Shrimp Orzo Pasta Salad recipe. As always, you can find the full list of ingredients located in the recipe card below.<\/p>\n <\/p>\n PREPARE THE SHRIMP <\/strong> Start by patting the shrimp dry with paper towels, then seasoning the shrimp with salt and pepper on both sides. <\/p>\n COOK THE SHRIMP <\/strong>Heat olive oil in a skillet over medium heat, then add shrimp and cook until pink and cooked through, then remove from heat. Coarsely chop the shrimp and set aside. <\/p>\n <\/p>\n COOK PASTA <\/strong>Cook the orzo in boiling water until tender, then drain and cool. <\/p>\n PRO TIP: Rinse pasta in cold water to stop the cooking process and cool it down quickly. <\/p>\n ASSEMBLE PASTA SALAD <\/strong>In a large bowl, combine orzo pasta, diced cucumber, cherry tomatoes, onion, feta cheese, parsley, and cooked shrimp. <\/p>\n <\/p>\n MAKE DRESSING <\/strong> Combine the olive oil, red wine vinegar, lemon juice, sugar, Italian seasoning, salt, and pepper and whisk together until well mixed. Pour over pasta salad, gently toss to combine, then cover and chill until ready to serve. Make sure to toss again before serving! <\/p>\n PRO TIP: You can also put all of the ingredients for the dressing into a mason jar<\/a>, cover with a lid, and shake to mix. It’s a great way to store the dressing if you make this pasta salad ahead, or if you have extra dressing! <\/p>\n <\/p>\n This pasta salad is best served chilled<\/strong> due to the cucumbers. If fresh onions are too strong for you, you can always saut\u00e9 them for a few minutes with the shrimp and cool them before adding them to the pasta salad to make the flavor milder. <\/p>\n Of course!
