Busy weeknights call for easy dinner recipes like this Shrimp Scampi Garlic Bread Pizza!<\/p>\n

<\/a><\/p>\n I’ve officially become a taxi driver.<\/p>\n A mom-taxi.<\/p>\n It was only a matter of time I suppose. With 4 kids, 3 different schools, swim team, cub scouts, band and various other activities that pop-up, I am officially in my car non-stop.<\/p>\n <\/p>\n Let me just give you an idea of my typical day…<\/p>\n 7am – my oldest daughter leaves for school. She’s already been up for an hour, but I am just rolling out of bed to kiss her goodbye. UNLESS… she forgets to set her alarm like this morning. She missed the bus and I had to drive her.<\/p>\n 8:15am – my 5 and 8 year old are on their way to the bus stop.<\/p>\n 8:45am – I’m packing up my 4 year old to drive\u00a0her to preschool.<\/p>\n <\/p>\n I’m given approximately 2 1\/2 hours of free time, which mostly consists of me just trying to catch up on laundry, cleaning the house, or editing photos for the blog.<\/p>\n 11:30am – Go pick up my 4 year old. Spend approximately 45 minutes at home before we pack up again to drive and pick up my kindergartener.<\/p>\n 12:15pm – Pick up Kindergartener.<\/p>\n Make lunch, eat lunch, clean up lunch.<\/p>\n 2:20pm – Oldest daughter comes home from school… help her\u00a0on her homework\/”suck the fun out of everything” (as my daughter likes to call it)<\/em>.<\/p>\n <\/p>\n 4:00pm – 8 year old comes home, help him get homework going.<\/p>\n 4:30pm – Take oldest to swim practice\/send 8 year old to cub scouts\/get ready for 10,\u00a0eight to eleven year old girls from church to come over (church callings)<\/em>. It all depends upon the day of the week.<\/p>\n 6:30pm – Pick up daughter from swim practice.<\/p>\n Feed them dinner.<\/p>\n <\/p>\n Can you see why I need easy dinners in my life? I’m sure this schedule is nothing new to many of you out there. You are all my hero.<\/p>\n I love using garlic bread to make quick and easy pizzas and the Shrimp Scampi on top of this one is my fave! The shrimp is saut\u00e9ed in Challenge Butter<\/a>, which seriously makes a difference you can taste.<\/p>\n <\/p>\n Lots of garlic, butter, lemon and cheese in this quick and easy weeknight dinner!<\/p>\n Almost makes me think I can handle another day of being mom-taxi.<\/p>\n Make sure you don\u2019t miss a thing!
